What can you do with all that fruit you just harvested?? We like to use our harvests from our test orchards to try out fruity recipes. Sometimes we follow a recipe quite closely, and other times we modify recipes or develop our own to suit available ingredients.

Persimmon Dumplings
This recipe was loosely based on an Austrian Apricot Dumpling recipe. I chose it because I wanted to find a way to showcase the flavour of American Persimmons a bit more, instead of losing it in a baking recipe that is packed with holiday spices such as cinnamon, cloves, nutmeg and cardamom. However, I can say there is definitely something to peoples' typical choice to use American Persimmons with strong spices because the flavour is a very mild fruit with lots of mouth-drying tannins when eaten on its own. Working with American Persimmons is also more labour intensive to process them and get the large seeds out, so beware of that before you start!
Peach Honey Butter
Our 3 peach seedlings have been mature and producing fruit for the past three seasons! Since we don’t really do any true fruit care for them - they are an experimental part of our dad’s nut orchard and are left to fend for themselves - some of the fruits are often a little blemished and have some bug damage. Despite this they are delicious when freshly picked (especially sun-warmed while up on the ladder doing the picking!) and the lack of care just showcases how easily one can get useable crops from a simple peach seedling! This year, I just had to try out something to preserve them since the crop was bountiful, so I chose a peach honey butter recipe from my mom’s collection. …Did I follow the recipe? In my true kitchen witchy fashion, I did not.
