It’s been a while since I did a grated halloumi recipe! So here’s one of my favourite summery lunches. 

I like doing it in a frying pan like so, but you could also cook it under a grill or in an air fryer. 

Top with fresh creamy avocado and balsamic tomatoes and red onion. It’s salty, cheesy, tangy - such a good combo.

Georgia May on Instagram: "Hot Honey Halloumi Flatbread Serves 1 602kcals 32g protein Ingredients Halloumi - 100g halloumi - Drizzle of honey - Pinch of chilli flakes - Pinch of dried thyme Salad - 1/3 cucumber - 1/3 red pepper - 5 cherry toms - 1/2 red onion - Tbsp fresh pomegranate - Drizzle of olive oil - Squeeze of lemon - Pinch of salt - 1.5 tbsp Greek yoghurt - 1 small clove garlic - Small bunch mint - Pinch of salt To serve - 1 flatbread - Pink onions - Fresh dill Mix the yoghurt with the grated garlic, diced mint and pinch of salt. Dice all the veg into small cubes and mix with the pomegranate, drizzle of olive oil, squeeze of lemon and a pinch of salt. Slice the halloumi and add to a hot pan, allow to cook for a couple mins, then add a good drizzle

This recipe is such a winner when you want a really quick meal that’s fresh, healthy and not boring. Rice and frozen peas are stir-fried with spicy, fresh, salty kimchi and then it gets topped with sweet and salty halloumi clusters. A fried egg would also make a good topping, as would prawns, alternatively you could opt for tofu for a vegan version. It takes 10 minutes to make and has bags of flavour. It’s also a great way to use up leftover cooked rice/kimchi that needs using. Kimchi is very good for your gut, meaning this is gut friendly, and

Another quick, easy dinner idea from my 20 in 20 series, and this one is a fragrant, vibrant saag halloumi (saag means spinach). Paneer is the usual cheese used in this Indian dish, but it works so well with halloumi.

I blended the garlic, ginger and onion here which makes them quicker to cook and I like the texture, but if you don’t have a food processor you can finely dice the onion and grate the garlic/ginger instead.

This is high protein (around 30g per portion before rice/naan) and nutritious - spinach is high in vitamin C, K, iron and more.

Halloumi in a deep, smoky spice mix with a hint of cocoa in (trust me, it works so well) with charred pineapple and spring onions. Pile onto corn tortillas with a sweet, tangy roast red pepper and tomatillo salsa. I made these using @cantinadelsabor’s Laguna Taco kit. Their vibe is Mexican fusion, with a Californian twist.
