My Easy Blackberry Apple Cake recipe is studded with fresh blackberries and topped with red-skinned apples baked to tender perfection. An easy glaze makes for an insta-worthy finish!
It’s Wimbledon season and what better way to celebrate than a tennis themed cake The cake is Victoria sponge, layered with buttercream and strawberry jam. My secret to a good soft sponge is add some ground almond. Once I layered the cake, I put a crumb coat them let this chill in the fridge for 30 minutes. I then added on more buttercream to smooth the cake out. I try not to use a thick buttercream layer hence why it’s not a total flush finish. To finish off the base, I use a spatula dipped in hot water and then dried to create the smooth finish. For the grass I used Wilton tip 233 with some green buttercream. To make the tennis balls I mixed some yellow and green royal icing to get a yellow green colour. I rolled little tennis balls with these and dotted them around the cake. I
