I've been to France and Spain and i agree it's quite difficult but not impossible. You just have to plan and research ahead of time. Mexico however wasn't a big deal. They eat a lot of veggies and beans so it goes a long way. And I've been told being vegan in Austin, TX is easy but not so much in the other big cities.
