Dorset is a washed rind cow milk cheese from the Consider Bardwell Farm in western Vermont. This absolutely delicious cheese has won medals at the American Cheese Society and the World Jersey Cheese Awards. The edible thin rind is "pretty-in-pink" and the yellow paste is buttery and semi-soft. The fresh milk aroma is followed by a deeper savory flavor.
