Continuing on an egg theme...this is my most favorite Portuguese dish!!  Drool!  Happy memory: my Mother-in-law held my baby shower at the now defunct Portuguese restaurant, Portugalia here in San Diego.  It was a brunch and I requested this dish.  Delicioso!
