Zucchini Pizza Eggplant Pizza Bites: 2 eggplants, cut into 1/4 " slices 1 Pasta Sauce 1 Pkg Pepperoni slices 1 C Parmasan Cheese 1 C Cheddar Cheese 1 T Oregano Slice eggplants in 1/4" pieces, place them in a bowl and sprinkle with salt. Let sit at least 30 minutes. To make the pizza: Spritz a cookie sheet with olive oil and place eggplant slices in a single layer. Spoon pasta sauce onto each slice, 2-4 pepperoni on each circle. Sprinkle cheese and oregano. 400 degrees for 10-15 minutes.
