Stuffed Breakfast Peppers | Sautee 1 small diced onion, 1 cup chopped mushrooms, 1/2 red pepper diced and 3 cups spinach with olive oil season with some salt. Distribute mixture into 9 pepper halves. Add 2 tbsp egg whites into each. Bake at 375 deg F for approx. 45 mins or until eggs are set.
