Carrot Cake Cupcake recipe: I halved this recipe for the cupcake version. SUPER EASY to make. I didn't even have to bust out the Kitchen Aid. I was concerned that the batter was too oily, but they turned out great. Moist and not too sweet. They held up great to the cream cheese frosting.
