The dressing is 3 cups diced mango, blended with 2 tomatoes, 1/2 cup organic corn, 1 pitted date, 1/2 lemon juiced. Blend until smooth then add a handful of cilantro, 1 large basil leaf, and 2tbsp chopped dill - pulse blend until herbs are chopped. Add finely diced red pepper and voila!
