And it’s pretty straight forward to make - perfect way to use the seasonal greens! In a pan, heat oil, add 2 sliced onions 6 cloves of garlic 1 inch piece ginger 2 green chillies 1 tsp cumin seeds 2 cloves 1 elaichi 1/2 inch piece of cinnamon Sauté the spices first and then add the rest. Cook for 2-3 mins. Then add 10-15 cashews and 1/2 tbsp khus khus (poppy seeds) and cook for 2-3 mins more. Add 1 cup water and let it boil for 5-6 mins till softened. Let everything cool down, grind into a smooth paste using more water if required. (Make sure to re grind all the grainy bits to get the maximum flavor) In a pan, heat oil and butter, add 2-3 cups of fresh green washed methi and sauté for 2 mins. Season with salt, 1 tsp dhania (coriander) powder and 1 tsp garam masala, 1/2 tsp pepper powder Cook the masala but make sure it doesn’t burn. Now add the gravy back to this and water if needed. Let it thicken by cooking and stirring for 4-5 mins. Ive added 1-2 tsps of sugar cuz I like this slightly sweet, you can only add a little, season with salt if needed, add sauted 200g paneer and 2 tbsp malai or cream! Cook that in for 2-3 mins and end with a red chilli and garlic tadka in ghee!
