BLUEBERRY OAT BARS
Ingredients 1/3 cup maple syrup 2 tbsp coconut oil 1/3 cup peanut butter 1 cup oats 1 cup oat flour 1 cup blueberries 1/4 cup water Method Grease or line a loaf tin. Simmer blueberries and water for 5–7 minutes, mashing slightly. Mix remaining ingredients in a bowl until it holds together (adjust peanut butter or oat flour as needed). Reserve 1/4 cup of the mixture for topping. Press the rest into the loaf tin. Spread the blueberry mixture on top. Crumble reserved mixture on top. Refrigerate until set.
Creamy spinach and tomato spaghetti 🍝
Instructions: 1. In a pot on a medium heat, add oil. Add minced garlic, sauté for 30 sec. Add tomatoes and spinach cook for 1 minute, stir occasionally. Add pasta sauce and let it simmer for 1 minute on low heat. 2. In a pot boil pasta and save half cup of pasta water for later use. 3. Add cream, salt, red chili flakes & black pepper. Bring the sauce to boil, add boiled pasta and pasta water. 4. Taste and add additional seasoning to your liking. 5. Garnish with fresh basil.
