Spaghetti alla melanzane with Nonna
25min · 1 serving spaghetti alla melanzane (eggplant) with Nonna 🍝🍆 Ingredients: • 2-3 aubergines/eggplants • 2 garlic cloves • 2 x 400g tins plum tomatoes • 1/2 tsp bicarbonate soda • 3-4 basil leaves • salt and pepper to taste • olive oil and vegetable oil for frying • 300g spaghetti vegan parmesan Slice the garlic and fry on a medium heat in olive oil for 1 minute, then add the tinned tomatoes, along with 1 tin’s worth of water (mash up any big lumps with a fork). While the sauce heats up, peel and slice the aubergines in veg oil for 2-4 minutes each side in batches. Once the tomato sauce is bubbling, add the bicarbonate soda, salt, pepper, sugar, and basil, then reduce the heat to a low simmer for 20 minutes.

Difficulty: Easy 😍Abbiamo fame al solo pensiero di assaggiare questa sfogliata di patate! 🥔🧀🥓 E voi? 😎 @danielerossichef 📌 Salva il Pin! Ingredienti: • 2 patate medie • 150g pancetta • 40g grana • olio evo q.b. • sale q.b. • 150g di formaggio emmental Procedimento: Pelate le patate e tagliatele finemente con una mandolina. Disponetele su una teglia (io ho usato una teglia 30x23cm), copritele con della pancetta, con il formaggio e infine con un ultimo strato di patate. Una spolverata di parmigiano, un pizzico di sale, un filo d’olio, riponetela in forno a 180° e fatela cuocere 20 minuti in teglia e 10 minuti su griglia da forno con la carta forno. Buon appetito!

Party Snack Roll 📝 Recipe for 4 servings 400 g vegan cream cheese 1 bunch of chives 40 g pistachios, peeled 30 g pecans 30 g cranberries Topping: agave syrup Side dish: Salt crackers Preparation: 1. Chop the chives and mix half with the cream cheese 2. Roll the cream cheese in cling film and place in the freezer for 1 hour 3. Chop the pistachios, pecans and cranberries, mix with the remaining chives 4. Take the cream cheese roll out of the cling film and carefully roll it in the mixture 5. Enjoy with salt crackers
