This cake is super moist and one of my favorite desserts! Full recipe below. Cake: * 2 cups sugar * 1 3/4 cup flour * 1/2 cup unsweetened cocoa powder * 1/4 cup black cocoa powder * 1 1/2 tsp baking soda * 1 1/2 tsp baking powder * 1/2 tsp salt * 2 eggs * 1 cup milk * 1/2 cup vegetable oil * 1 tsp vanilla extract * 1 cup boiling water Mousse: * 2 cups semi sweet chocolate chips * 1 cup heavy whipping cream * 1 1/3 cup heavy whipping cream, chilled * 1/8 cup powder sugar * 1/2 tsp vanilla extract Topping: * Optional chocolate drizzle or chocolate ganache Instructions: * Heat oven to 350° F. Grease and line a 9” or 10” springform pan. * Combine dry cake ingredients in a mixing bowl. * Add in wet ingredients, minus the boiling water. * Mix for 2-3 minutes till wet and dry ingredients are combine. Use hand held or stand mixer. * Add boiling water and stir together. * Fill cake pan with cake mix and bake for 30-35 minutes. Place on cooling rack for a minimum 30 minutes. * While cake cools, make mousses. * In a large heat proof bowl, microwave chocolate chips and 1 cup of heavy cream. This takes about 60 seconds total, stir chocolate in 30 seconds increments. Let chocolate sit at room temp, occasionally stirring for about 20 minutes. * While chocolate is cooling beat 1 1/3 cup chilled heavy whipping cream, powder sugar and vanilla extract till still peaks form. Place in fridge till chocolate is fully cooled. * Fold in cooled chocolate to whip cream till fully incorporated. * Smooth mousse over chocolate cake with a spatula. I use straight edge spatula at the end to get the top fully smooth. Recipe 👇🥕 Carrot Cake Recipe •270ml (1 cup + 1/3cup) Milk ( non dairy unsweetened milk or any milk of choice) •165g (2/3cup) Light Brown Sugar •170g (2/3cup) Sugar (Cane / Castor) •180ml (3/4cup)Oil •2tsps Vanilla Extract •300g (2 cups+ 1/3cup)All Purpose Flour •1+1/2tsp Baking Powder •1 + 1/2tsp Baking Soda •1 + 1/4tsp Cinnamon Powder •1/4tsp Salt •300g (2cups + 1/2cup)Carrots ( peeled and grated, roughy 5-6 medium sized) •70g (2/3cup) Walnuts, chopped (optional) Method:- -Pre Heat oven to 350f. Cream Cheese Frosting: •340g (12oz)Cream cheese, room temperature(I have used vegan cream cheese) •340g (1 cup + 1/2cup)Butter, room temperature ( I have used vegan butter sticks) •340g (3cups) Powdered sugar •2 tsps Vanilla extract or Cinnamon Powder •60g (1/2cup) Walnuts, toasted and chopped for topping Method: -Whip butter in a mixing bowl until light fluffy with a paddle attachment or electric whisk. -Add powdered sugar in 2-3 parts & vanilla extract. Mix until smooth. -Add soft cream cheese and mix until smooth. Assembly: -Trim the top layer of Carrot Cake.
