My favorite crumble ever — topping off these sweet potato boats for the most epic side dish or add some protein for a meal! Perfect for literally anytime 🫶 • For the crumble: 1/2 cup raw pecans 5-6 dates 2 oz feta cheese Handful arugula 1/2 tsp salt 1/2 tsp pepper Zest of 1/2 lemon • For the sweet potatoes: 4 medium sweet potatoes, halved Olive oil Salt • Optional tahini-balsamic: 2 tbsp tahini 1 tsp maple syrup 1 tsp balsamic vinegar Pinch salt 1 tbsp water *whisk to combine* • 1️⃣ Preheat the oven to 425.2️⃣Drizzle olive oil on the bottom of a large sheet pan, season with salt and place the sweet potatoes face down. You can use any fruit or veg combo you like in the following ratios: -1 c. organic fruit -1/4 cup organic veggie -1/4 c. Organic juice (Green apple has less sugar than red apple. Orange juice has less sugar than apples. Pomegranate juice is healthier than both oranges and apples) -1-2 tsp 100% maple syrup or raw honey (optional) -3 tbsp. grass fed beef gelatin for most nutrients. Method: Process fruit, veg, juice, and sweetener together until smooth Warm mixture in a stainless steel pot over med heat Once warm, whisk in gelatin until dissolved Use droppers (come with little molds) to put mixture into mold and refrigerate for 1 hour. Kelly LeVeque, CCN on Instagram: "Please don’t put them in the fridge put them back in the oven to roast them to perfection! 😂 Shout out to my friend liz who shared this! @lizmoody 🔑 roast the veggies until the water evaporates and they don’t look wet - that’s 15 min in my oven but in mammoth it takes 20 min at 400 degrees - then oil and season and roast until they are crispy to your liking I was the first one to tell my clients to buy frozen vegetables to save money or if they traveled for work and they didn’t want them to go bad, but I personally thought they were soggy and disgusting ever time I made them (great advice right 🤦🏻‍♀️) until I learned how to do this and then the skies opened up ⛅️ ➡️ ☀️ and I use this trick probably two to three times a week!!!
