1. Every butter brand behaves differently and it can take a couple of tries to understand the correct working temperature range for the brand of butter you use. The butter I use works best between 8-15°C and generally this is the range I work within with good quality butter.
2. ���While it is possible to laminate using regular grocery store butter, using high quality butter with minimum 82% fat makes it much less likely for the butter to crack during lamination.
