Cranberry Pecan Quinoa - According to another pinner: unexpectedly awesome! Very fall. Added 1/4 tsp more cinnamon and of course fresh lemon juice makes a difference. Chopped the nuts up small so you get them in every bite. Added about 1/2 cup more liquid - turned out more like mashed quinoa. Maybe just 1/4 extra water next time? Almond milk really is great with it.
