The Cochon De Lait ~The traditionally rural Acadian dish of roasted suckling pig known as cochon de lait. I was blown away by the Cochon de Lait Po' Boy at Katie's Restaurant and Bar. Here, shreds of tender pork are piled on buttered, lightly toasted Gendusa bread, with a light coleslaw. The pork has a pleasant, sneaky heat, and tastes as though it could've been braised in milk. The fresh, superior bread sends this over the top, with a firm but yielding golden crust and soft interior.
Hubby and I loved this. A couple of changes: included the onions with the pork when shredding, then placed shredded pork in a screaming hot skillet sprayed with Pam to get a slight crust for crunchiness.
