Mascarpone Frosting 1 C heavy cream 8 oz mascarpone cheese, room temp 1/2 C confectioners With an electric mixer med speed, whisk cream til stiff peaks form (careful not to over beat, or cream will be grainy). In another bowl, whisk together mascarpone and confectioners’ sugar til smooth. Gently fold whipped cream into mascarpone mixture until completely incorporated. Use immediately.
