Shrimp and Avocado Bowls
Ingredients: - 1 lb shrimp, peeled and deveined - 2 avocados, diced - 1 mango, diced - 1/4 cup red onion, finely chopped - 1/4 cup fresh cilantro, chopped - 1 lime, juiced - 2 tbsp olive oil - 1 tsp chili powder - Salt and pepper to taste Instructions: 1. In a bowl, combine diced mango, red onion, cilantro, and lime juice to make the salsa. Season with salt and set aside. 2. In a separate bowl, mix olive oil, chili powder, salt, and pepper. Add shrimp and toss to coat. 3. Heat a pan over medium-high heat and cook the shrimp until pink and opaque. 4. Assemble the bowls with cooked shrimp, diced avocado, and mango salsa.
